Chef Bismarck's passion for cooking began as a young boy helping his grandmother at her restaurant in Nicaragua — from cleaning fish to stealing bites of her garlic shrimp when she wasn't looking. That early love of fresh, locally sourced ingredients never left him.
After graduating from the culinary program at Escuela Bellart in Barcelona, Spain, Bismarck worked in Michelin-starred restaurants and hotels across Europe, the Caribbean, and Latin America before making Northern Virginia his home.
His professional range spans from grand Michelin-starred venues to beloved local cafés. While Spanish and Italian cuisines are his personal favorites, he brings a truly global perspective to every event La Chica serves.

Allison is the organizational heart of La Chica. As Catering Coordinator and Co-Owner, she ensures that every detail — from the first quote to the final pickup — is handled with care, precision, and a deeply personal touch.
Her expertise in event logistics, client communication, and party planning means every client feels like the most important event on the calendar — whether it's an intimate gathering of 20 or a grand reception for 200.
Together with Chef Bismarck, she has built La Chica into Northern Virginia's most trusted name in event and party rentals — a business founded on warmth, reliability, and a genuine love of making people's celebrations unforgettable.
